Weekend Baking Session # 24

Suddenly I was craving for coconut bun. It was my favourite breakfast back home. Along with a mug of hot Milo, coconut bun tastes even greater. After 4 years, I had them for breakfast. For once I felt that I was at home. What a feeling!! For those who want to have the same feeling, here is the recipe...

Coconut Bun

What do we need:

Bun
2 cups plain flour
4 tbsp sugar
1 1/2 tsp active dried yeast
1/2 cup milk
1/4 cup butter
1/2 tsp salt
1 egg

Coconut Filling
1 cup grated coconut
1/3 cup grated palm sugar (or more as per desired)
1/2 cup water
1 tbsp plain flour

Egg Wash
1 egg yolk
1 tbsp water

How do we do it:

Whisk together the flour, yeast, sugar and salt. Set aside.

Heat milk and butter until the butter melts and the mixture is about 50° C warm. Pour into the flour mixture. Also add the egg into the flour. Knead the dough until smooth and shiny. Cover and let rise in a warm place for 1 hour or until doubled in bulk.

Meanwhile, heat the water and palm sugar until the sugar dissolves. Add the grated coconut and flour. Stir constantly until the mixture becomes soft paste. Remove from heat and let the coconut filling cool.

Punch down the dough and knead gently on a lightly floured surface. Divide dough into 12 equal sized balls. Flatten the each ball and fill with the completely cooled coconut filling and seal the bun neatly. Gently rotate the bun repeatedly until it forms a smooth-skinned ball. Place each bun into a greased baking dish. Cover the dish and let the buns rise again in a warm place until nearly double in size, approximately 45 minutes.

Beat together the egg yolk and water. Egg wash the buns. Bake in a preheated oven at 190° C for 20 minutes.

Another fabulous recipe Pushpa. How do you know so many different recipes that involve baking? Have you grown up in Switzerland itself? I am asking bcos, as far as I have seen, baking is very rare in India.

I moved to Switzerland just 4 years ago. I do not come from India. In fact, I've never been to India but I would very much love to visit the place wer my ancestors originated from. I was born & bred in Malaysia :o)

Is there any substitute for the palm sugar? Don't think the grocery stores in the bay area carry it.

U could use brown sugar or even plain white sugar instead.

puspha! This looks great! Did you grate your own coconut or buy the flaked kind that comes in a bag? I've only bought the bagged kind because I have no idea how to open a coconut! Hopefully the dessicated kind could be substituted?

Thank u Diddy. Err... emm... hehehe I used desiccated coconut. Just cook it extra time to hydrate it. Stir in the flour when the coconut is soft enuf.

YUMMY!!!!!We used to get a different variety of coconut bun in Iyengar Bakery (as most bakeries r known in chennai :)I love coconut bun. I used to finish school and cycle down to the bakery almost everyday to have coconut bun and veg puff :)Thanks for sharing this recipe. It got back wonderful memories. Even since I moved to Perth last Dec, dah lama tak makan roti kelapa. Eventhough it is not one of my favourite, as some bloggers have mentioned it previously, it remind me of childhood.

Apa khabar? Saya pun sudah lama tak makan roti kelapa. I´m going to bake this bun tomorrow for my weekend indulge :) One question - will this bun still remain soft after a few days old?? Pushpa...a quick question...Is it ok if I make the dough the previous day..i mean till the shaping the dough into balls and use it the next day ? will it work..?

mishmash !- No, it won´t as the yeast wuld turn into alchohol. Resulting into an alchohol tasting dough.

Y don´t u prepare the filling earlier? U can refigerate or freeze it.

I eat this buns in a Chinese Restaurant. I look for the recipe and did it myself. They came good the only problem was to put the filling inside and closed the bun doesn't get the round shape to well.
Anyways, I love them.

Anonymous- Probably the yeast tat u used were dead or ur room temperature wasn't high enuf for the yeast to be active. Y not u try it out again & let me know of the outcome?
