The Summer Sensation # 3

Though the weather has not been promising here in Switzerland, it is still the summer season. As a continuation with our summer sensation, I made pudding.

Pineapple Pudding

What do we need:

2 cups pineapple purée
1 cup pineapple juice
1/2 cup milk
1/2 cup custard powder
1/4 cup sugar
1 tbsp agar-agar powder

How do we do it:

Prepare the pineapple purée by blending fresh or canned pineapple. Set aside.

Cook agar-agar powder with pineapple juice on low heat until the agar-agar dissolves.

Combine the milk, custard powder and sugar. Pour into the pineapple juice while stirring constantly. Add the pineapple purée. Cook until the mixture thickens. Remove from heat and pour into moulds.




Serve Pineapple Pudding cool.

Ur Pineapple pudding looks sooo yummy!!!Ur making me feel very hungry :)Wish I lived close to ur place to eat ur mouth watering recipes ;)BTW I tried ur red kidney beans spread this morning and my husband liked it.Thanks for sharing all ur recipes.I dont have pineapple with me to try this recipe maybe should try it out sometime later.

Your pineapple pudding looks so yummy.Would like to give it a try.But should we use warm milk to mix the custard powder & also when do u add the pineapple puree?

Thank u & welcome to the blog, Kate. Well, I did not use the tempering method for the custard powder. I just realised tat I´ve missed the pineapple puree. I´ve amended it. Thanx for highlighting.

Agar-agar is jelly made of sea weed. I have used it as thickening and binding agent. U could also use bout 2-3 tbsp of corn flour or 1 tsp of gelatine.

Thanx to tu too, Prema. Well, here in switzerland, they do sell it in the local supermarkets. More or less, yes, u can get the texture.

You sure putting that heart shape mould to good use Pushpa! Lovely pud-i guess gelatin or china grass will have the same effect?

hehehehe..... Yes, elatine would. Just 1 tsp wuld b enuf. I've no idea of wat china grass is. Would u shed some light please?

I tried a variation of your recipe...I used mangao puree instead of pineapple and omitted the milk and custard powder. It tasted wonderful but the leftovers that I stored in the fridge seem to lose liquid. Now they are sitting in a pool of their liquid. There is no difference in taste. Any guesses as to why liquid is seeping out. This is my first experience with Agar Agar. I bought it at the local Korean grocery after I saw your tempting photo.

My search for a recipe with Pineapple brought me to your blog. though we're close to winter in Germany pineapple is selling cheap at my vegetable market! so well i bought the ingredients yesterday and made the pudding.. easy to make and amazing taste... fruity, fresh and my 20 month old son loved it. must try the coconut bun next... thanks for the recipe(s)! latha
