Weekend Baking Session # 21

I started doing something but ended up with something else. It was so tasty that I wish to share the recipe with everyone thru our Weekend Baking Session.

Cheesy Orange Marmalade Rolls

What do we need:

2 cups bread or high protein flour
1/2 cup plain flour
1/2 cup water
1 egg
2 tbsp sugar
2 tbsp butter
2 tsp instant yeast
1 tsp salt

1 cup orange marmalade
1 cup grated cheese

How do we do it:

Dissolve yeast in 1/4 cup of the warm water.

Combine egg, butter, salt, sugar and the yeast mixture. Add flour alternately with the remaining 1/4 cup of warm water. Mix until well combined. Turn the dough onto a floured board and knead. Cover and let it rise in a warm place for 1 hour or until doubled in bulk.

Roll dough out into a rectangle. Cover generously with orange marmale. Sprinkle with the grated cheese. Starting from the long side, begin rolling the dough down to the bottom edge, swiss roll style. Cut the rolled dough into 1 inch slices and place on a lightly greased pan 1 inch apart. Let the rolls rise again in a warm place until nearly double in size, approximately 45 minutes. Bake in a preheated oven at 200° C for 12-15 minutes.

What is bread or high protein flour?
compared to plain flour?

Instant yeast is 'levure chimique' (for cake baking) or yeast for bread?

It looks great and I want to try it.

High protein flour also know as strong flour or bread flour is milled from hard wheats. It contains high quantities of proteins (13 - 14%) & gluten which is necessary especially for bread making as it forms a network which traps gases produced by yeast. It is not suitable for making muffins, cakes and cookies.

All purpose flour or plain flour contains slightly lower protein content (10 - 12%)than bread flour. It is used for general baking.

Levure chimique is baking powder tat is used for baking cakes and cookies.

Instant yeast is the tiny brownish granules used for leavening bread. It comes in little packets. U can always use fresh yeast tat comes comes in block form as well.

Pushpa, this is a great recipe. Is instant yeast same as active dry yeast ? Also, will these rolls be soft or a little crispy ?

Yes, instant yeast is the dried active yeast.

The rolls a little crispy on the top due to the caramelised orange marmalade but soft on the other parts.

oh yum yum yum! I was planning on making these with orange marmalade a while ago...but the marmalade got done...but I might try it with strawberry jam.

Hi Pushpa,

These look so delicious! Reminded me of my mother's sticky rolls. Similar dough to yours, with brown sugar and melted butter as filling. One could add nuts, but she never did. Thank you for this recipe!
